    Our Naturally processed coffees are a blend of Parainema, Caturra and Catimor varietals.   Our Natural processed coffees spend upwards of 6 weeks drying on our raised African beds.  This additional time investment to produce a smooth and complex cup of coffee is a testament to our commitment to putting the Dominican Republic on the map as a producer of high quality, unique coffees.

    Our Pulped Natural is primarily a blend of Parainema, Caturra and Catimor varietals.  This is a special coffee for those looking for a subtly more complex cup.

    This is our third season offering a Dominican Geisha to our roasting partners.  Spirit Mountain was the first farm in the DR to cultivate this special coffee.  This Geisha came from Boquete Panama and has been planted high on the farm, between 4,000 – 4,500 feet elevation.  The cold winter temperatures high on the farm, make our Geisha unique.

    Parainema has become the primary varietal that we cultivate at the farm.   It has a smooth cup and subtle tasting notes which are highlighted by the high elevations of the farm, while being semi-resistant to Rust. Parainema cups similar to a Pacamara.
